Cole Slaw, Asian, Nutty with Sesame Dressing

 
 

Dressing
 

(4 tablespoons)  1/4

Cup Vegetable Oil
2 Tablespoons Sugar
 2 Tablespoons Rice Wine Vinegar (a must)
1 Tablespoon Soy Sauce
2 Liquid ounces, use Measuring cup Sesame Oil

 
Slaw Mixture
  

1 Head (2 lb +/-) Cabbage -- Shredded
1/2 Can, 15.5 ounce     Mandarin Oranges
1/4 Cup Butter
2 Ounces Peanuts -- Chopped
1 Individual package (small)   Ramen Noodles (Chicken flavor)
 2 Tablespoons Sunflower Seeds
1 Tablespoon Sesame Seeds
1/2 Stick  Carrot
 
1.  Stir the dressing ingredients (soy sauce, sugar, rice wine vinegar, sesame oil) in sauce pan until sugar dissolves. All components should be at room temperature or just a bit warm.  Any more heat will destroy the blended sesame/vinegar/sugar taste.  At about room temperature or just warmer it will emulsify perfectly.  Any hotter or cooler and it won't blend properly.
2.  Put the dressing into jar and refrigerate after dressing is blended and tested for correct taste.

3.  Crush and crumble Ramen noodles in a bowl, put aside.
4.  Put peanuts in a zip and slightly crush with your hand, put aside.
5.  Now combine,  and mix well in a bowl,  all crumbled Ramen noodles, peanuts, sesame seeds, & sunflower seeds, put aside.
6.  Melt butter in large skillet.  Add all Ramen noodle seasoning packs, stir and combine well into melted butter.
7.  In melted butter / seasoning pack pan mixture add the noodle/peanut/sesame & sunflower seed mix and stir CONSTANTLY until the sesame seeds JUST start to brown.  They are the smallest and will brown first.  That means all the rest is done.  Take the pan off the fire and let sit till cool enough to put in zip or in slaw mix.   CAUTION, they will brown quickly so be careful!

8.  Shred / chop Carrot
9.  Shred / chop Cabbage
10.  Open Mandarin Oranges and drain liquids

Orange / Cabbage / Carrot preparation is done
 

11 When all is cool, just before serving combine all ingredients is a large bowl or tub and mix to taste and visual appeal.  Be careful, the dressing goes a LONG way.  The above portions / servings are good portions to start combining, but I would hold back a small bit on everything, then add slowly at the end to ensure all works out to your taste.
 

  Also might be good to add cooked chopped chicken if you want, but I don't.

 

 
 BEWARE - This recipe, amazingly enough, DOES NOT SCALE !?!?!


For example, I typically do a 6x the amounts above for 50 - 100 people.  In that  particular instance, with a 6x the ingredients above, or scaling the recipe up 6 times you must make the following changes:

  • SESAME OIL  - 6x 2 ounces of sesame oil as listed above, or 12 ounces needed to be cut in half to 6 ounces
     

  • SUGAR  - 6x 2 tablespoons of sugar as listed above, or 12 tablespoons needed to be increased by 2 additional tablespoons of sugar, for a total of 14 tablespoons
     

  • RICE WINE VINEGAR  - 6x 2 tablespoons of vinegar as listed above, or 12 tablespoons needed to be decreased by 2 tablespoons of vinegar for a total of 10 tablespoons
     

    Other pertinent mixing information:

  • 2 five pound bags of Coleslaw mix (like from Smart & Final) work perfectly with the x6 dressing formulization above
     

  • 6x the above Nut mix works perfectly with 2 five pound coleslaw bags
     

  • A 6-7 pound can of Mandarin Oranges works perfectly with 2 five pound coleslaw bags.
     

  • Two 5lb bags coleslaw, 6x the nut mix, and a large can of Mandarin Oranges all mix together for the perfect compliment.
